Beeh Patata (Lotus Curry)



Ingredients:


Lotus stem - cleaned, washed, sliced and boiled ( I used tinned variety) 1/2 cup

Potatoes - washed, peeled and cubed - 1/2 cup

Tomato - washed, peeled and chopped fine - 1 cup

Ginger garlic and green chili paste - 2 table spoon

Onion - peeled, washed and chopped fine - 1 cup

Plus one small onion peeled, washed and cubed

Turmeric powder 1/4 teaspoon

Coriander powder 1 teaspoon

Garam masala powder 1/2 teaspoon

Cumin seeds and methi seeds 1/4 teaspoon each

Salt to taste

Oil 3 tablespoons

Fresh coriander chopped - for garnish


Method:


Heat oil in a pot on medium heat.

Add cumin and methi seeds and then add chopped onion - both varieties

Mix and sauté for 2 minutes and then add ginger garlic and green chili paste

Mix and keep cooking till onion turns golden brown

Now add potatoes and beeh

Then add all dry masala and salt

Mix and add tomato purée and cook, mixing from time to time, till tomato and cooked and oil starts separating.

Now add one cup water, cover and cook for 7-8 minutes, or till potato becomes soft.

Garnish with Garam masala and chopped coriander.

Can be relished with chapati as well with rice .

 

Preparation Time: 15 Minutes


Cooking Time: 30 Minutes
