Protein Rich Soup


Sabudana is one good source of vegetarian protein. Also, it helps to regulate blood pressure, so its consumption is helpful to keep blood pressure in check.


Cabbage also has both the above mentioned properties.


Cashew nuts also have good amount of protein.


I have used all three ingredients in this soup to make it healthy energy rich soup.


Ingredients


Cabbage, carrots, potato, tomato - chopped

ginger and green chilies - chopped

Sabudana - just wash once (no need to soak)

Cashew nuts

Pure ghee

Salt and black pepper to taste.

Fresh green coriander and few pomegranate seeds for garnish.

Lemon wedges.





Method


Heat a pot on medium flame.

Put 2 tablespoons melted ghee.

Put ginger and green chilies. Mix.

Put cabbage, carrots, potato and sabudana.

Add salt to taste, mix well and sauté for a minute or two.

Now add water and mix well.

Water should be at least 2” above the vegetables.

Add freshly ground pepper, mix well.

Cover the pot partially and keep stirring after few minutes.

Once half the water is evaporated, add cashes and mix.

If required, add some more water.

Cook till sabudana become translucent.

Take pot off the flame.

While serving garnish it with freshly chopped coriander and pomegranate seeds.

If you like, squeeze fresh lemon juice to it.
