Kaju Cookies



Ingredients


50 gms unsalted butter at room temperature

1 1/2 Cup plain flour

1/3 Cup sugar powder

20 Cashew kernels chopped

1 Teaspoon vanilla essence



Method


In a bowl mix butter and sugar and whisk it to a soft fluffy cream

Now add flour, vanilla essence and cashews to it and fold it to a dough



Refrigerate this dough for 10 minutes

Preheat oven to 160c

Roll out dough as a big thick roti

With cookie cutter cut out cookies of desired shape

Bake them in a pre heated oven for 12-15 minutes

Cool them completely and store in an airtight jar.
