Masala Koki


Ingredients:


2 cups whole wheat flour

2 tablespoons chopped fresh coriander

1 tablespoon chopped onion

1/2 teaspoon chopped green chili

1/4 teaspoon cumin seeds

Pinch of red chili powder

Salt to taste

4-5 tablespoons melted ghee or oil (room temperature)

Water to knead


Method:

In a bowl put all above ingredients except water

Mix well till it looks like bread crumbs, put little more oil/ghee if required.

Now knead it by adding little water at a time to a tight dough, much tighter than puri dough.


Now heat a tava on medium heat.


Take 1/3 rd portion of this dough and shape it like a ball.

Flatten it a bit in your palms and on your rolling board roll it into a small fat disc.

The disc can be about 1/2 inch thick and about 8 CM wide

Bake this disc a little on both sides.

Take it off the tava and it should look something like what we have here


Roll it out like a thick chapati

Take it back on the tava after rolling

Bake it on tava on both sides , smearing little oil at a time.

Take it off tava once its fully cooked.


Similarly make more Kokis from the remaining dough.


Preparation Time: 10 Minutes

Cooking Time: 20 Minutes


Serves: 3 Kokis


Serve hot if you lIke it crisp, else keep it covered for 2-3 minutes and it will become soft.


It can be served and enjoyed with yoghurt in summer and with honey or fruit jam in winter.
